Tyler and Sara’s journey began thousands of miles away in sunny San Diego. Brought together by a love of hospitality and food, their shared dream of owning a restaurant took shape over the years. From coast to coast, they pursued experience in every facet of the restaurant industry—from kitchens to front-of-house leadership. After falling in love with New Hampshire’s charm and community spirit, they knew they had found the perfect home.
In 2025, they opened The Jefferson in Strafford’s Bow Lake Village, inside the historic Independence Inn. The Jefferson isn’t just a place to eat—it’s the result of decades of dedication, exploration, and a love of American cuisine. With their combined 45 years of industry experience, Sara and Tyler are proud to serve a community that welcomed them with open arms.

We never cook with seed oils. Our kitchen uses only Butter, Beef Tallow, Avocado Oil, and Extra Virgin Olive Oil (EVOO) for clean, nourishing flavor you can feel good about.
